You should definitely check out Brodual if you haven't, it's a youtube channel that makes lists of mods by category and gives a short explanation. It's very professional sounding dude talking and they have soooo many mods showcased that I wouldn't have found otherwise.
I played Elder Scrolls Oblivion as a kid. I wasn't very good at fighting or doing quests, but it was still very fun to just go around. I remember liking the expansion pack Shivering Isles a lot, it includes a long questline with a character you only meet briefly in Skyrim, which is a chame bc it's a very fun character. If you ever run out of things to explore in Skyrim, or if ya get super into the lore and wanna experience Skyrim's history in Oblivion (or earlier, but I haven't played those), go for it!
